EXTRACTOS DE RESIDUOS AGROALIMENTARIOS Y TRATAMIENTOS DE SUPERFICIE SOBRE BOTELLAS DE VIDRIO TRANSPARENTE CONTRA LAS REACCIONES DE FOTODEGRADACION EN VINOS ROSADOS
ROSE AND WHITE WINES ARE USUALLY MARKETED IN FLINT GLASS BOTTLES. THESE BOTTLES ARE TRANSPARENT IN ORDER TO ALLOW THE CONSUMER TO APPRECIATE THE COLOR OF THE WINE BEFORE BUYING IT. HOWEVER, THIS TYPE OF BOTTLE DOES NOT PROTECT THE... ROSE AND WHITE WINES ARE USUALLY MARKETED IN FLINT GLASS BOTTLES. THESE BOTTLES ARE TRANSPARENT IN ORDER TO ALLOW THE CONSUMER TO APPRECIATE THE COLOR OF THE WINE BEFORE BUYING IT. HOWEVER, THIS TYPE OF BOTTLE DOES NOT PROTECT THE WINE FROM LIGHT. ONE OF THE MOST FREQUENT PROBLEMS DERIVED FROM PHOTODEGRADATION OF WHITE AND ROSE WINES IS KNOWN AS “GOUT DE LUMIERE” OR “TASTE OF LIGHT”. THIS ORGANOLEPTIC DEFECT IS CAUSED BY THE PHOTOACTIVATION OF RIBOFLAVIN (OR VITAMIN B2) WHICH PROMOTES THE OXIDATION OF METHIONINE, AND AMINO ACID PRESENT IN WINES, TO METHIONINE SULFOXIDE. THIS OXIDATION TRIGGERS SEVERAL PHOTOCHEMICAL REACTIONS THAT LEAD TO THE APPEARANCE OF DIFFERENT VOLATILE SULFUR COMPOUNDS, WHICH PROVIDE VERY UNPLEASANT AROMAS OF CABBAGE, ONION, ETC. IN THE WINE. IN ADDITION, THE PHOTODEGRADATION OF WINE ALSO LEADS TO IRREVERSIBLE ALTERATIONS IN ITS COLOR, MAINLY BY THE DEGRADATION OF ANTHOCYANINS AND THE APPEARANCE OF YELLOW TONALITIES. THEREFORE, IT IS ESSENTIAL TO FIND A PHOTOPROTECTIVE STRATEGY TO AVOID THE DETERIORATION OF BOTH THE COLOR AND THE AROMA AND FLAVOR OF ROSE WINES. IN THIS REGARD, THIS PROJECTS AIMS TO COMBINE DIFFERENT STRATEGIES IN ORDER TO OBTAIN SUCH A PHOTOPROTECTIVE SOLUTION. FOR THIS PURPOSE, DIFFERENT TRANSPARENT AND COLORLESS COATINGS WITH OPTICAL PROTECTION IN THE RANGE OF 370-450 NM AND OTHER MECHANICAL CHARACTERISTICS, SUCH AS HARDNESS AND CERTAIN TRIBOLOGICAL PROPERTIES, WILL BE DEVELOPED FOR SUBSEQUENT APPLICATION ON FLINT GLASS BOTTLES TO BE USED FOR ROSE WINES. ON THE OTHER HAND, EXTRACTS WITH ANTIOXIDANT AND PHOTOPROTECTIVE ACTIVITY WILL BE OBTAINED FROM AGRI-FOOD WASTE, WHICH CAN BE ADDED TO THESE WINES BEFORE BOTTLING IN ORDER TO PROTECT THE MOST SENSITIVE COMPOUNDS FROM PHOTODEGRADATION. THE ANTIOXIDANT POTENTIAL OF THE ADDED EXTRACTS WILL ALSO ALLOW US TO EXPLORE THE POSSIBILITY OF USING THEM AS PARTIAL OR TOTAL SUBSTITUTES FOR SO2, CURRENTLY USED AS AN UNDESIRABLE PRESERVATIVE IN WINES. WE WILL ALSO DEVELOP AN INSOLATOR THAT WILL ALLOW US TO IMITATE AND, ABOVE ALL, ACCELERATE THE PHOTODEGRADATIVE PROCESS OF WINE. WITH THE USE OF THIS EQUIPMENT, WHICH WILL INCLUDE A SERIES OF TUNGSTEN LAMPS, WE AIM TO ACHIEVE A DEGREE OF UVA-VISIBLE RADIATION SIMILAR TO THAT OF NATURAL LIGHT, BUT WITH A SHORTER EXPOSURE TIME. THE FINAL OBJECTIVE OF THE PROJECT WILL THEREFORE BE TO EVALUATE THE ACTION OF THESE COATINGS AND EXTRACTS ON THE QUALITY OF A ROSE WINE THAT WILL BE SUBJECTED TO AN ACCELERATED RADIATION TREATMENT IN THE INSOLATOR EQUIPMENT PREVIOUSLY DEVELOPED. THE EFFICACY OF THE COATINGS AND EXTRACTS WILL BE EVALUATED, BOTH SEPARATELY AND IN COMBINATION, BY DIFFERENT ANALYTICAL TECHNIQUES (SPECTROPHOTOMETRY, LIQUID CHROMATOGRAPHY, GAS CHROMATOGRAPHY), AS WELL AS BY SENSORY ANALYSIS.IN SUMMARY, THIS COORDINATED PROJECT WILL PROVIDE A STRATEGY TO INCREASE THE SHELF LIFE OF ROSE WINES THROUGH THE USE OF COATED BOTTLES AND EXTRACTS OF BY-PRODUCTS OF AGRI-FOOD ORIGIN AS COMPLEMENTARY PRESERVATIVES OR EVEN SUBSTITUTES FOR SO2.
