I am a food engineer graduated from UTE (Ecuador). I have graduated from the Master's program in Biotechnology and Bioengineering at the UMH, in Spain. Currently, I am studying the PhD program in Molecular and Cellular Biology at the same university. I have work experience in the area of food microbiology, applied microbiology, food science, biochemistry, chromatography and human cell culture. At present, I am investigating in the area of biocompounds (antioxidants) of food by-products as potential antimicrobials against antibiotic resistance in pathogens, as well as their relationship with other active antimicrobial molecules.
